| Audrey came back from church, the primary kids had harvest festival there, after the service they bag the goodies up and distribute to all the old age pensioners - yes we got our bag - with a cake! I ate some just for you Raka but it was one of those horrible brown things with dried fruits but I did eat a bit as a penance. We also got a jar of homemade lemon curd so I ate that too,not on bread just off a spoon, now I feel really sick but it was sooooo good. Hey I might start going if they feed me. | |

| Ooooooh, lemon curd. I'm one of thew few Americans who actually know what lemon curd is! Recalling my time in England in my youth, I fondly remember consuming mass quantities of lemon curd spread on... well.. everything. A great failing of American culture, to be sure, that we don't have it over here. When my Mom was younger, she would make some every year or so, God/Creator/Odin/Danu/Zeus/Ishtar/Buddha bless her, but it's been a decade or more since I've tasted it! | |

| LOL all the recipes call for juicing and zesting the lemons. I'm tempted to cheat and just buy bottled lemon juice but all the recipes say that's a no-no! | |

| Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients 4 lemons, rind and juice 4 eggs 110g/4oz butter 450g/1lb sugar
Method 1. Grate rind of lemons and squeeze out juice. Put sugar, rind and juice, butter and beaten eggs into a large basin on top of a pan of simmering water. Stir with a wooden spoon until thick and curd coats the back of the spoon. Pour into warm sterile jars, cover, seal and label. Refrigerate.
THEN SELL ALL (10% of net profit to e so I can fund the bowel cancer unit & my local hospital). | |
